Loquat Mousse with Condensed Milk

Ingredients

  • 500g loquats (peeled and pitted)
  • 1 can (395g) condensed milk
  • 1 box (200g) heavy cream
  • 1 envelope (12g) unflavored gelatin
  • 5 tablespoons water (to hydrate the gelatin)
  • Juice of 1/2 lemon (optional – enhances the fruit's flavor)

Preparation:

  1. Prepare the Loquats:
    Carefully wash the fruit, then remove the skin and discard the pits. Put the pulp in a blender and blend until you have a smooth purée.
     
  2. Hydrate the Gelatin:
    In a small bowl, add the unflavored gelatin to the five tablespoons of water. Let it sit for about 5 minutes to hydrate. Next, microwave it for roughly 15 seconds, or heat it in a double boiler, just until it's completely dissolved (don't let it boil).
     
  3. Prepare the Mousse:
    In the blender, add the loquat purée, condensed milk, heavy cream, and lemon juice. Blend well until you get a creamy, uniform mixture. With the blender still running, incorporate the dissolved gelatin and continue blending for another 30 seconds.
     
  4. Chill:
    Distribute the mousse into individual serving cups or place it in a serving dish. Chill in the refrigerator for at least 4 hours, or until it sets.
