Harvest Season

Between November and December, cherries from Chile — such as Royal Dawn, Santina, Lapins, Sweet Aryana, and Bing — are harvested at their peak ripeness. The process is carried out to ensure the fruit retains its stem and the integrity of its glossy skin, guaranteeing that only healthy, clean cherries move on to the next stage.

Storage

Immediately after harvest, cherries are carefully packed to preserve their natural freshness. To maintain firm and juicy flesh, they are stored under strict cold conditions, with temperatures between 0°C and 2°C and high relative humidity (90–95%). This meticulous care prevents dehydration and keeps the skin’s vibrant shine intact.

The Journey

Transportation is a critical link in ensuring Category I quality. Cherries ideally travel at temperatures below 4°C, a vital thermal control to ensure the fruit arrives with its characteristic moderate sweet flavor and deep red color. Packing is uniform, keeping the same variety and size together in each unit, guaranteeing full traceability.

At the Point of Sale

The cherry is a convenient and nutritious fruit, ideal for fresh consumption by all age groups. With an average shelf life of 10 days, it stands out for its resilience and lack of post-harvest treatments. In addition to being an excellent source of potassium and vitamins, its longevity at the point of sale allows for efficient marketing until February, reducing waste.

Royal Dawn

One of the earliest-ripening cherries, with a ruby-red color and an excellent balance of sweetness and acidity.

Santina

Lapins

A late-harvest cherry with glossy skin, highly resistant to rain, and intensely sweet flavor.

Sweet Aryana

An early-ripening fruit with a rounded shape and an exceptionally sweet aroma.

Bing
